Jedi Outcast, Jedi Academy, Knights of the Old Republic, Dark Forces, Dark Forces II,etc.
I need to know the order the games are supposed to go in so I can buy/play them in that order.

You have Dark Forces, Dark Forces II, Jedi Knight: Jedi Outcast, Jedi Knight: Jedi Academy (all in that order) comprising one series. The first was released in 1995 and the last in 2003, so the first two or three games may look very dated and you may have trouble getting it to work on a modern PC. However, they all can be played on PC (only the last two can be played on Xbox), and the later ones still look pretty good. You don't have to play the series from the beginning either if you'd rather not.
Knights of the Old Republic (and Knights of the Old Republic 2) is a completely different series with different gameplay, set several thousand years before the movies and with no connection at all to Jedi Knight. They're both RPG's as opposed to the more actiony/adventury/shootery style of the Jedi Knight games, and came out on both Xbox and PC.
