If you are looking for a simple, fun read, I would head in the opposite direction, and read the Han Solo Trilogy by A.C. Crispin. The Han Solo trilogy consists of The Paradise Snare, The Hutt Gambit, and Rebel Dawn. It tells the story of Han's life from the time he was 17, right up until Episode 4. It explains things like how Han and Lando came to be friends, how Han won the Millenium Falcon, and how Chewbacca came to owe Han a life debt. It deals with some of Han's early girlfriends, and kind of describes his bachelor life. I would reccommend it because of how closely it matches up with the star wars trilogy.
I posted the wikipedia link for every Star Wars book ever written- I would reccommend finding some of thse titles and reading the synopsis Wikipedia provides. In the back of some of the older Star Wars books, like the Courtship of Princess Leia, there is a list of Star Wars books as well. The list is older and outdated, but it's a little easier than wading your way through the wikipedia list.

I read those before the prequel SW movies came out and they were pretty good.
I think since then there's been like umpteen million books set in the Expanded Universe.
